Lemon Curd Cheesecake


Sunyi je rumah I minggu ni coz my 2 ninjas not around. Sudah kami hantar ke kem motipbasi  kat kg bersama-sama mak & atuknya hari Ahad hari tu... :) So, tiap-tiap mlm call masjid Tanah, nak melepas rindu. Cheese cake ni dah lama nak buat lepas buat lemon curd aritu. Tapi asyik la postpone sbb kena potong queue dgn resepi2 lain. Sedap I tell u ... makan sambil-sambil layan fb & tengok tv ... memang syiokk habis la... x sedar  dah habis 2 potong >_< Thank you again to my old skool fren .. Linda, yg introduced me to this wonderful recipe ;)  

By the way.. for the crust tu, I x guna graham cracker ye, xtau mana nak cari. So ganti dgn biskut marie + cornflakes - blend. Selalunya guna oreo atau digestive jer.

Lemon Curd Cheesecake
Adapted from Susan Spungen's Recipes: A Collection for the Modern Cook
Servings: Serves 10–12
Ingredients
  • 1/2 cup lemon juice
  • 6 egg yolks
  • 1 cup sugar
  • 4 teaspoon freshly grated lemon zest
  • 8 tablespoons (1 stick) cold unsalted butter , cut into pieces
  • 1 1/4 cups graham cracker crumbs
  • 3 tablespoons sugar
  • 1/8 teaspoon salt
  • 5 tablespoons unsalted butter , melted
  • 2 1/2 packages (8 ounces) cream cheese
  • 1/2 cup plus 2 tablespoons sugar
  • 3 tablespoons all-purpose flour
  • Salt
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon freshly squeezed lemon juice
  • 1 teaspoon freshly grated lemon zest
  • 2 large eggs , plus 1 yolk
  • 1/2 cup sour cream
  • Butter for pan
  • 1 cup chilled lemon curd


Directions

To make lemon curd: Whisk together lemon juice, egg yolks and sugar in a heavy, nonreactive 1-quart saucepan. Cook over medium-low heat, stirring constantly with a heat-proof spatula or wooden spoon until mixture thickens and coats back of spoon, 5 to 10 minutes. (It should read 140° on a candy or instant-read thermometer.)

Remove saucepan from heat and strain mixture over a bowl. Stir in lemon zest and butter until butter completely melts. Cool slightly before using. Curd can be stored in refrigerator in an airtight container up to 1 week. Warm over a double boiler or microwave briefly to return it to liquid form. It will set up again when chilled.

To make crust: Preheat oven to 350° and position rack in middle of oven. Prepare a 9-inch springform pan by cutting a parchment circle to fit inside.

In a small bowl, combine graham cracker crumbs, sugar and salt. Using a fork, stir in butter until well combined. Press mixture into prepared pan. Bake 10 minutes. Cool on a wire rack while you prepare filling.



To make filling: Decrease oven temperature to 325°. In an electric stand mixer fitted with the paddle attachment, beat cream cheese at medium-low speed until creamy, about 2 minutes. Scrape down sides of bowl. With mixer on low, gradually add sugar, then flour and finally a pinch of salt. Scrape down sides again.

Switch to a whisk attachment and continue by mixing in vanilla, lemon juice and lemon zest. Whip in eggs and yolk, one at a time, scraping bowl and whisk at least twice. Continue to whip on low speed and add sour cream. Whip until well blended; do not overbeat. Batter should be light and somewhat airy.

Brush sides of springform pan with melted butter. Wrap outside of pan tightly in heavy-duty aluminum foil making sure there are no holes in foil. Pour filling into pan. Place pan in a large roasting pan and pour hot tap water into roaster so that it comes about halfway up springform pan. Transfer to oven and bake until filling is just set in center, about 45 minutes. If edges start to pull away from sides of pan sooner than that, remove it from oven. Immediately remove pan from water and remove foil. Place on wire rack and cool to room temperature.

Stir lemon curd until smooth (it should be the consistency of thick sour cream) and spread over surface of cheesecake. Cover springform with plastic wrap and refrigerate 8 hours or overnight. To unmold cake, place a hot towel around pan to loosen cake from sides. Run a butter knife around edges and remove outer part of pan.

    setuju sgt.. oo lupa nk betulkan yg tu, i pon x guna graham cracker la u. dulu2 buat ciskek penah gak cuba cari. last2 give up, pakai digestive or oreo je. mcm rasa graham cracker tu? tp yg ni saja nk try crust lain lak, i guna biskut marie coffee flavor + cornflakes (blend). sedap gak..

Sotong Goreng Kunyit (versi kering)

Lama dok berhibernasi, tetiba keluar tayang sotong goreng kunyit je? Hehe ... Actually ada beberapa orang member pernah tanya, macamana I buat sotong goreng kunyit. Sebab katanya, bila dia goreng minyak meletup2 lak. So bila I buat satu hari tu, teringat la nak share kat sini. Tu yang beriya-iya pulak snap gambar .. ;) 
Tak tau nak kata, ni versi Kelantan ke or Siam, so I panggil versi kering je lah. Before kawin dengan my darling, x rajin pon buat style gini sebab dr kecik biasa makan yg jenis basah berkuah. Bila dah kawin, balik kelantan selalu tengok dan makan kakak ipar goreng style ni terus jatuh cinta gitu.

Hari ni nak share this one drink yg tengah hot di dapur sweetthots. It's such a pleasing breakfast treat! Seisi rumah kami tgh dilanda demam Jus Kurma Bersusu ni. Hampir terlupa suatu ketika pernah buat this juicehere until last few weeks my colleague Fiza tanya I tentang resepi puding yg pernah I cuba. Masa belek-belek my own blog, ternampak ni ... terus dah teringat-ingat and I just love to prepare this drink for the kids sbb without much forces I berjaya buat depa makan kurma, minum susu & makan madu !! Alhamdulillah ... And that's the reason I'm telling you ... I'M LOVIN' IT ...to bits …

Almaeda Restaurant @ Ayer@8 Precint 8, Putrajaya

Dah lama x share pasal tempat-tempat makan. So hari ni I nak share new eateries in Putrajaya. Quite interesting place walau pun masih banyak kedai-kedai yg kosong. Antara yg I nampak hari tu (xsempat nak round sebab nak cepat pon ye, dah nak kejar maghrib pon ye) ada Fuel Shack, Hot & Relax dan Teh Tarik Place.
That day bila diumumkan anak-anak UPSR kena resit paper BI pulak tu, I pon bagitau hubs nak try makanan kat Ayer8, Putrajaya yg xjumpa the day before. Untuk memujuk hatinya yg lara tu kan ... Sensitif bebenor ... dok tangkap leleh je dalam kereta. Kami actually stayed 2 nights kat Hotel Pullman sebab my hubs ada training kat situ. Tapi pagi-pagi menderas la balik Ampang, nak hantar Haziq ke sekolah. Nasib baik exam start 8.15am & we all sampai around 7.15 - 7.20am mcm tu. 
Bila kat Putrajaya, mcm buntu je bab-bab makan ni. Lemau lak bila mikir nak makan kat Alamanda so I tanya member2 kat group whatsapp. Kak Long kawasan suggested this restaurant. Roti Giant & kamb…

Kuih Keria 'International' Haji Jalil @ Limbongan

Kalau dah sampai area Klebang ni, harus lah singgah kedai Tuan Haji Jalil yang dah cukup terkenal kat Melaka dan 1 Malaya ni. Tempatnya di Limbongan - Klebang Kechil, Melaka. Kat tepi jalan je, tapi hari tu excited sgt ... lupa nak ambil gambar lokasi. U ols bayangkan je la ... out of 5 visits, kali ke 5 okeh baru I dapat merasa kuih ni sbb tiap-tiap kali pergi asyik habis. Yang I dapat tengok, dulang kuih je ... huhu. 
Nak lepaskan kempunan datang jauh-jauh dari masjid tanah, kami makan ler laksa. Tapi, SERIOUSLY ... laksa Haji Jalil memang TERBAIK lah, antara laksa yg tersedap I pernah makan. Trust me, no regret. Kalau tengok orang-orang yang datang membeli kat sini kan, rata-ratanya mesti order laksa gak. Sama laku dengan kuih keria dia lah ... kalau x, xde la Haji Jalil masak kuah laksa seperiuk besar .. entah-entah beberapa periuk besar ;). So kalau u all sampai sini, jangan lupa cuba laksa juga. Gerenti x menyesal punya. Cukup rasa ikan, masam masinnya ... pendek kata secukup r…

Nasi Ayam Goreng Kunyit Mat Rock

Orang kata untung keje kat area MV nih ... tapi bagi kitorg yg dah dekat 3 tahun opis pindah kat sini, dah buntu dah mikir menu lunch. Kalau dapat pekena Nasi AYam Kunyit Mat Rock kat atas ni, sedapnyaa...

Huhu ... mana nak gagau kat area opis ni. Orang yg pernah merasa mesti tengok gambar ni kecoq air liuq ..  terbayang ayam goreng yg sedap panas2 bersalut dgn sambal macam sambal belacan siam berserta potongan kacang panjang dan bawang holland .. agak menyengat la pedas dia tapi memang sedap. Cukup membuka selera dan memang boleh teringat-ingat. Kicap ada disediakan jika nak. Harga pon berpatutan.
Kita pon mula terpikat, hasil hasutan Kucing Oren nan gumukkss itew .. sila lihat entri dia yg ni. Gambar i ni lagi tangkap leleh kan, kan .. haha .. Memang dah lama menyimpan hajat nak makan since baca entri dia. But time I makan ni, berlaku secara kebetulan jer 2 bulan lepas. Pergi klinik area Jln TAR, macam buntu lak tetiba nak makan apa sbb lalok kena jab ala2 penangih dadah tgh high .…

Kuih Buah Rotan

Kuih yang dah lama dibuat, baru sekarang nak tayang ;) Buat ni pun sebab hafiy request .. at last tak dimakannya pun sbb mummy nya ni goreng x rangup ler pulak. Isy... masalah yg serupa dgn ros kat jepun nun. Selain dipanggil buah rotan, ada gak yg menggelar kuih ni, kuih redan or kuih bijan. That day puas I google resepi ni & at last terjumpa kat rumah ros jintan manis ;) Rasanya memang sedap dah ... cuma part goreng tu ada fail sket la. Al-maklum la buat pun masa bulan puasa, bila tengok dah perang je terus angkat. Boleh goreng semula untuk merangupkannya ^_^
Buah Rotan

500 gram tepung pulut
1/2 biji kelapa
4 sudu besar gula pasir
1 biji telur
Biji bijan halus
1 sudu besar esen ros (x letak)

1. 1/2 biji kelapa dicampur dengan 1 gelas air dan diambil santannya. Kemudian 1 biji telur,4 sudu gula dan esen ros dimasukkan kedalam perahan santan dan dipukul hingga sebati.
